Peanut Butter Popcorn

This is a family favorite snack. It is addictive, so be warned. And make a double batch! gooey, sticky, crunchy, sweet, peanut buttery.

I’ve also tried a few different variations so I’ll post the traditional recipe and then give you a few healthier versions.

1/2 cup unpopped popcorn

1/2 cup light corn syrup

1/2 cup sugar

1/2 cup peanut butter (I use adams’ and it works just fine)

Pop the popcorn as you like, stovetop, airpopper, instant pot…

Mix the other ingredients in a saucepan and heat until the sugar is melted.

Mix the popcorn and peanut butter mixture together and let cool until it won’t burn your mouth. At this point you can mix in peanuts, chocolate chips, m&m’s, mini marshmallows… if you want.

Devour at will. Or try your will power and attempt to limit your intake; up to you.

I have a had luck replacing corn syrup with honey or maple syrup. Also brand of peanut butter doesn’t seem to matter.

I’d imagine you can use coconut sugar just as well, if that’s what floats your boat.
