Spinach, Tomato, and Olive Quiche

This yummy dinner came about tonight because we had a Costco sized container of spinach in the fridge that was looking like it was about to turn. So I added it to a onion, garlic, olives, and sun dried tomatoes, some eggs and cream cheese and baked it all up.

This is a crust less quiche, but if you wanted to you could stick it in a pie shell, prebaked.

Recipe: One onion, diced Four cloves of garlic, minced
1Tbs olive oil
3-4 cups spinach, washed. (To use frozen just drain it first)
1/4 cup cream cheese
5-6 eggs, beaten
1/4 cup olives, chopped
1-2 Tbs sun dried tomatoes

Sauté the onion and garlic, when translucent add the spinach and olives. When the spinach is wilted add the cream cheese and take off heat. Mix until the cream cheese melts into the mixture, let cool 10 minutes, add the tomatoes and eggs.
Pour into a greased pie tin and bake at 350 for 30 minutes or until done.
