This is a salad I made once to take to a boat house with some friends who are vegetarian. I had a general idea of what I wanted to make and this happened to be the result! It turned out amazing! I’ve made it since and plan on making it today so that I have some to take to clinicals this weekend and so that Matt has food in the fridge for when I am gone!

So the recipe: (you can find others like this online)
Pasta (whatever you have on hand will work) 1-2 balls of mozzarella 1-2 jars of kalamata olives 1 jar sundried tomatoes in oil 1/3 c. balsamic vinegar 1/4c.olive oil 1 tbsp. mustard (any kind will work) salt pepper thyme (dried works) oregano Basil
Directions: Boil one bag, box, or sack of noodles. Whichever you have, I like the spiral pasta for this, it looks cooler!
While the pasta is boiling you can cube one or two balls of mozzarella (I use two if I get the smaller balls, or one if I get the larger loaf).
Drain the olives.
Whisk together the balsamic vinegar and mustard, slowly adding the olive oil. Once all the oil is added dump the can of sun dried tomatoes in (oil and all). Then I like to toss the mozzarella in and mix it up with the sauce.
Drain the pasta and add to bowl with sauce and mozzarella. Add olives and mix! Taste and Season as needed with some salt, pepper, thyme, and oregano if you so desire!
In my first attempt I tore up a handful of basil leaves and added them too! This was good lukewarm and chilled! Great Sumer side dish! You could even sauté some veg and put it in too!
I found that the Kalamata olives were about half the price at Wal-Mart compared to Safeway!
